Microbiology of the food chain


The new version of the UNE-EN-ISO 18593 Standard Microbiología de la cadena alimentaria. Horizontal methods for surface sampling, which sets out a number of protocols to determine the presence of microorganisms on surfaces of utensils, work surfaces or other equipment in contact with food, has just been published.

The main changes to this standard are due to the needs to be met by the food sector, such as requirements related to the location and area of the surface to be sampled, as well as sampling time and frequency.

This document, referred to in the 2073/2005 Regulation on microbiological criteria for foodstuffs, is very useful for companies in the food supply chain, given its usefulness as a tool to monitor how efficient cleaning and disinfection processes are at their installations.
